Kale Alfredo

You will need:
  • 2 1/2 cups Kale
  • 1 1/2 tsp Minced Garlic
  • 1 cup (dry) Penne Pasta, like Ronzoni Healthy Harvest Ancient Grains
  • 1/2 cup  of a Light Alfredo sauce, like Prego Light Homestyle Alfredo
  • 1/2 tsp Italian Seasonings
  • 3 tsp Extra Light Tasting Olive Oil, I used Pompeian brand 
  • Dash of salt and pepper
  • Directions
    • Cook the pasta as directed until desired tenderness, set aside
    • Saute the minced garlic in the extra light tasting olive oil over medium heat for a couple minutes
    • Add kale
    • Reduce heat to low
    • Add a dash of salt and pepper
    • Once kale has cooked down some add the cooked pasta and Alfredo sauce
    • Add the Italian seasonings
    • Stir until sauce and pasta are hot
    • Enjoy!
