Mommy's Meatloaf

Anytime I make something that my daughter, who can be a picky eater, gobbles up I love it! I hope your family enjoys it!

You will need the following:

  • 1 Tablespoon of Italian Seasonings Blend
  • 1 Teaspoon Garlic Powder
  • 1/2 Teaspoon Chili Powder
  • 1/4 Teaspoon Paprika
  • 1/2 Tablespoon Minced Dry Onion
  • 1/2 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt
  • 2 lb Uncle Albert's Meatball & Meatloaf Mix (From Walmart) Or you can do a combination of a pound of ground beef and a pound of ground pork if you can't find this brand. See picture:
  • 1/2 cup of 2% milk
  • 1/2 cup of Italian Style Bread Crumbs
  • 2 Large Eggs
  • Loaf pan for baking. I used a copper one that has a lift tray in it. Works great!
Directions:
  1. Preheat oven to 375 degrees
  2. Combine all dry ingredients EXCEPT the bread crumbs. I used a small container with a lid so I could just shake them.
  3. In a bowl, combine meat mix, milk, bread crumbs, eggs and half of the dry ingredients mixture you did in Step 2. Set the rest aside for the topping.
  4. Mold into a loaf and gently place into pan.
  5. Now drizzle with Ketchup (Heinz was used) and sprinkle with rest of dry mixture. You can use the rest or just sprinkle the amount you want on top.
  6. Place in oven and cook for 1 hr. 20 min or until the temperature is 165.
  7. Let rest in pan for a few minutes before removing and placing on a serving dish. If you have a pan that includes a lift out option like mine then you can remove from pan and let it rest on serving dish.
*This should serve 3-4 people depending on the size of the slices.

Pan I used which I found on clearance for $9.00 at Wal-Mart this year.
